Whole Wheat Waffles and News

Hi people. I do have some big news, but I'll post the recipe first. I have never actually posted a recipe before, but these waffles are really good and a little different. They are also a great way of using up kernels of wheat from any food storage you might have. I got the recipe off a blog called The Sisters' Cafe that has tons of tasty recipes. The only thing is I have no idea how it was supposed to make 10 waffles. It made closer to 3 for us. Maybe I just make them ginormous. I don't know. I also added the recipe for coconut syrup, which sounds a little strange but is actually very very good. We put strawberries on top because I can't eat waffles without them. Well I could, but I prefer not to. And now I'm babbling. Anyway, here's the recipe.

Whole Wheat Blender Waffles

1 c. plus 1 Tb whole wheat berries
1 c. milk
2 eggs
4 Tb oil
2 Tb sugar (or honey)
2 tsp baking powder
1/2 tsp salt

Blend wheat berries and milk on high for 4-5 minutes, until batter is smooth. Add remaining ingredients and blend on low for a minute, or until incorporated. Cook on hot waffle iron. (Stir batter before pouring into waffle iron, because the heavier wheat particles will settle at the bottom.) Makes about 10 waffles. (Ha! more like 3)
(To make pancakes instead of waffles, use 1 c. wheat berries and 2 Tb oil.)

Coconut Syrup

7-8 T. butter
¾ c. buttermilk
1 c. sugar
½ tsp baking soda
1 tsp coconut extract

Place butter, buttermilk and sugar in a pot. Then turn stove on medium and stir until butter melts and sugar dissolves. Bring to a boil and boil one minute. Remove from heat and add soda and flavoring. It will bubble up; just continue to stir and give it a few minutes for the 'fizz' to reduce before serving.

Oh yeah, I almost forgot my big news. We're moving to Georgia for Jared's work in early June. Ok, talk to you later!

Shut up! Dang it, how are we gonna do our yearly get-togethers with Lynnette and Melody? I guess it will have to be during the winter holidays. You WILL come home for the holidays, right?

Good luck in Georgia! That is exciting. What is his job going to be? Are you keeping or selling your house?

I love the Sisters' Cafe and had forgotten about this recipe that I wanted to try. I'm glad you reminded me.

Yeah, you better come home at least once a year!!

I know you like the site Melody. I got it off your blog but forgot to tell you.

We do plan to come home once a year, so we can hopefully get together then. In fact, we may see each other more once I move than we do now because we'll be forced to make the effort. Ha ha ha ha.

I know you will love GA but what if you NEVER move back? You are irreplacable. Who else is soo sarcastic and hilarious on the outside and mushy gushy kind hearted on the inside???? NO ONE.

I know I'll see you soon but I have to tell you now just in case I get carried away talking about myself. I love you. You are always magically appearing when I need you most. You are a remarkable friend.

Congrats on your Georgia move! You will love it there, I still miss it. I will be in AZ over Memorial Day weekend and if you are around I would love to go to lunch.

How can you say it as if it were an afterthought?!? You are not allowed to move to Georgia! OK, so I know I can't do anything about it, and I do hope you have a great experience there. Thanks for the recipe, too. I'll have to give it a try.
